lofty goals week:

it's lofty goals week here at renee's house.  money is tight...and so are my pants. ha! SO...i've decided since i have a wedding to go to in two weeks, i need to shed a few pounds of flab. i also need to go to the grocery less and empty my freezer/pantry. i did a half hour of cardio tonight. dinner last night was eggplant, chicken and mushroom parmesan.... tonight-broccoli, zuchinni, ham and cheese quiche. 

i'm super excited!  and i'm such a nerd.  



here's the recipe for my quiche:



  • 4 eggs



  • a few generous splashes of milk



  • some handfuls of any cheese you want (i used an italian pizza blend)



  • about 2 cups...maybe probably a little more...of any veggies, meat, mushrooms you decide (i chose zuchinni, yellow neck squash, broccoli, and ham) remember...this is clean out your fridge/freezer/pantry time



  • a couple handfuls of flour (3/4 cup-ish??) 



  • minced onions...i put in about a tablespoon-ish (pretty much just dumped it in my hand and mixed it in.



  • salt to taste...black pepper if you want...but my body says no.  black pepper is pretty much poison in my body.  i also add a little bit of garlic to the veggies while they are cooking.  

brown meat and set aside.  add veggies and minced onion to the pan and saute in olive oil until they are a lovely golden brown color.  beat eggs, milk and flour together and add cheese, and other veggies/meats.  pour into a greased pie pan and bake at 350 degrees for 30-35 minutes.  eggs should no longer be runny in the middle when done.  

as you can see, it's pretty much an add as you go kind of deal.  you can use more eggs if you're feeding a larger crowd.  just adjust as you like.  :)  


try it!  you'll like it!  well...i hope.  :)  i like it anyway!

Wow, who even KNEW you could make quiche at home!? Fine, people who regularily cook. It sounds great though, and a good way to use up stuff!
