it's lofty goals week here at renee's house. money is tight...and so are my pants. ha! SO...i've decided since i have a wedding to go to in two weeks, i need to shed a few pounds of flab. i also need to go to the grocery less and empty my freezer/pantry. i did a half hour of cardio tonight. dinner last night was eggplant, chicken and mushroom parmesan.... tonight-broccoli, zuchinni, ham and cheese quiche.
i'm super excited! and i'm such a nerd.
here's the recipe for my quiche:
a few generous splashes of milk
some handfuls of any cheese you want (i used an italian pizza blend)
about 2 cups...maybe probably a little more...of any veggies, meat, mushrooms you decide (i chose zuchinni, yellow neck squash, broccoli, and ham) remember...this is clean out your fridge/freezer/pantry time
a couple handfuls of flour (3/4 cup-ish??)
minced onions...i put in about a tablespoon-ish (pretty much just dumped it in my hand and mixed it in.
salt to taste...black pepper if you want...but my body says no. black pepper is pretty much poison in my body. i also add a little bit of garlic to the veggies while they are cooking.
